Spice Up Your Weight Loss with These Tasty Couscous Salads

Sexy Smoky Couscous


  • 2 cups couscous, cooked
  • 1 zucchini, sliced
  • 2 yellow squash, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • ¼ cup parmesan
  • 2 cloves garlic, minced
  • 1/3 cup lime juice
  • 2 tsp. cumin
  • ½ cup coriander, chopped
  • Salt and pepper to taste
  • Olive oil to coat the vegetables.


To prepare:

1.Brush the zucchini, squash, onion and cherry tomatoes with olive oil. Cook on a barbeque grill. Cover regularly, allowing the ingredients to absorb the smoky flavour.

2.Combine the garlic, lime juice, cumin and coriander. Stir through the cooked couscous.

3.Serve the vegetables on the bed of couscous and sprinkle the parmesan. Add salt and pepper to taste.

Super Saffron Couscous Salad


  • 1/4 tsp. saffron threads
  • 2 1/4 cups vegetable stock
  • 1 tsp. lemon zest
  • 6 tsp. olive oil
  • 2 cups instant couscous
  • 2 cloves of garlic, chopped finely
  • 1/4 cup fresh lemon juice, or more to taste
  • Small pinch of cayenne pepper (optional– adds spice)
  • Salt and pepper to taste


To prepare:

1.Combine the vegetable, saffron threads, lemon zest and olive oil in saucepan and bring to a boil.

2.Add the instant couscous and stir. Bring back to a boil, then cover immediately and remove from the heat. Let the steam stay in the pot until the couscous is tender and fluffy.

3.Stir through the garlic, lemon juice and cayenne pepper. Add salt and pepper to taste.
